Using stale bread
Most of us don’t have a pig or chickens to give stale bread to and those of us who do might not want to immediately toss hardened bread. Fear not because you can still use the stale bread in recipes! This easy to cook Breakfast Coffee Cake Casserole uses stale bread as its main ingredient cutting your cook and prep time in half compared to making new dough.
This recipe uses common ingredients in the home and for an added bonus you can use fresh bread as well! In addition, since my home is dairy free, I used soymilk and a butter alternative, but traditional dairy products or other alternatives can be used. I guarantee this will become a quick family favorite with this sweet treat a must for breakfasts to come.
Where did I get this recipe?
When I first moved out knowing how much to buy and when was an issue leading to a lot of food waste. Food would go bad, and bread would either mold or go stale. Of course, this was upsetting! I was just trying to be a good homemaker and my efforts seemed to be more detrimental than helpful.
Enter stage left my grandmother. My grandma has been sending me newspaper clippings for as long as I can remember. Articles on toads, gardens and recipes filled the little envelope that arrived monthly. One month a particularly good recipe was inside one of those envelopes and I took it to my pantry. Although it called for fresh bread, I used the only bread I had left which was stale. My boyfriend Matt and I loved the outcome. It was a coffee cake made from your run of the mill sliced bread.
That was the only time I made that coffee cake from the recipe as I still had yet to hone my organizational skills and the clipping was lost taking the recipe with it. Since then when I inevitably have a loaf of bread go stale, I take to the kitchen to try and remake by memory the delicious cake. That is how the Breakfast Coffee Cake Casserole was born. I’m not sure if any cake will live up to the memory of that coffee cake but this is the closest that I have achieved to making a copycat version of that mouthwatering breakfast. In fact, this will make your mouth water, I’m sure.
